3.1.3. Effect of zinc complexation on lactose
The pH of lactose solution was gradually reduced (from 6.0 to 3.1), as the concentration of zinc sulphate increased (from 1 mg to 10 mg of zinc/g of lactose). This in turn increased the amount of NaOH required to maintain required pH 7.0. The data in Fig 2 showed that, at zinc concentration from 1 to 5 mg zinc/g of lactose the amount of lactose precipitation gradually increased and maximum lactose precipitation was observed at 10 mg zinc/g of lactose concentration (2.6 gm lactose/100 mL).
