After standing on your feet for six or eight hours, or possibly even more, the
prospect of cleaning up the bar is not thrilling. But clean you must. A good way
to start is to safely lock up any wines that have been on temporary display. Next,
put all perishables, such as cream and juices, into the refrigerator. Juices should be
in covered plastic containers. If you have any opened cans of Bullshot, Coco Lopez,
or other mixes, empty them into glass or clear plastic containers, label the contents,
and refrigerate them.
