Results from the DNA assay showed that sterilized yacon tuber
flour had an antioxidant effect, since when compared with the negative
controls, i.e. oxidative degradation of H2O2 alone (Fig. 4; lanes
2 and 6), it protected DNA in a large extent, since only a fraction of
DNA was oxidized and degraded to small fragments (Fig. 4; lanes 3
and 7).
