3.2.In vitro starch digestibility of pre-dehydrated cookie
Non-hydrolysed starch content of the cookie samples treated for 20 min,120min,and16h is shown in Fig.5.According to Englyst, Kingman, and Cummings (1992),the starch hydrolysed within 20min,and between 20min and 120min,corresponded to rapidly digestible starch and slowly digestible starch, respectively. In addition, non-hydrolyzed starch content after 120 min corresponds to resistant starch. Since the experimental procedure used in this study does not complrtely agree with that of Englyst et al., the results of this study were shown as non-hydrolyzed starch content at the given conditions.
