The TBARS values for fresh LL in the current experiment at 4 days retail display (5 days post slaughter)were higher for lambs fed algae based diets (Algae = 3.57; FlaxAlgae =2.32) compared to lambs fed the Basal (1.25) or Flax diet (1.22) indicative of an enhanced lipid oxidation when EPA + DHA contents were increased in LL muscle with algae supplementation, but this was not the case for LL samples measured at 0 day retail display (1 day post slaughter, TBARS ranged from 0.61-0.98 mg MDA/kg muscle).
