Salmonellosis is one of the most widespread zoonoses throughout the world, and human infections
are often associated with the consumption of contaminated poultry products. In recent years, many incidents have been attributed to raw or undercooked eggs, but broilers are also a considerable reservoir of infection for man. Control measures are difficult to use effectively because there are numerous potential sources of Salmonella infection and product contamination in an integrated poultry enterprise. Salmonella can be transmitted vertically and horizontally and may contaminate eggs and carcasses.
