Color your plate with fruits and vegetables interventionThe Color Your Plate with Fruits and Vegetables intervention was adapted from the University ofGeorgia’s: Live well age well, serving up fruits, vegetables, and physical activity everyday (Department ofFoods and Nutrition; The University of Georgia & Resources, 2005) and the Nutrition for Older AdultsHealth (NOAHnet) program: Fruit and Vegetable Series (Department of Foods and Nutrition; TheUniversity of Georgia, 2003). Differences in program implementation included the current pilot studyusing five nutrition lessons rather than eight to 10, focusing only on fruit and vegetable consumption, andproviding specifically developed supplemental learning tools that emphasized the health benefits ofphytochemicals using color categories. In this study, the intervention group received a series of five, 15-minute fruit and vegetable-themed nutrition education lessons and educational tools. The lessons taughtparticipants the basics of which phytochemicals were associated with a particular color category and theirhealth benefits; serving sizes of fruits and vegetables; and shopping techniques and tips to overcomecommon barriers typically perceived by older adults in regards to incorporating a variety of fruits andvegetables into their daily meals.
