Gelatin desserts (e.g. JELL-O®) currently on the market use
artificial(FD&C) colors, which many consumers perceive
negatively. Therefore, we created three naturally colored
gelatin dessert powders. By using combinations of
elderberry, red cabbage, and caramel colors, we were able
to develop peach, raspberry, and grape gelatin desserts
whose colors closely matched their JELL-O® counterparts.
Color mimicking, safety, and shelf life were the primary
concerns during product development
