The knife assembly shall be readily removable for cleaning. Where the cutting process requires a unit assembly of knives, the unit shall be readily removable for cleaning as an assembly (e.g., French fry cutters).
5.28.2 The parts of the assembly shall be removable for cleaning.
5.28.3 Knife assemblies shall be tight fitting and shall have no recesses where food could accumulate.
5.28.4 Knives, shredders, and graters shall be made of stainless steel or equivalent. The knife shaft shall be hard chrome-plated steel, stainless steel, or equivalent.
5.28.5 The housing for food cutting attachments shall be easily cleanable and either readily removable or readily accessible.
5.28.6 Plungers made of wood shall not be used.
