Astaxanthin is a carotenoid pertaining to the group of
xanthophylls. Furthermore, it is the main carotenoid pigment
found in aquatic organisms, such as shrimp, salmon, trout,
and lobster, giving the characteristic red-orange color in
these organisms. Astaxanthin do not present provitamin A
activity but exhibit a panoply of important pharmacological
properties that may be involved in the prevention or might be
useful as a future novel strategy for the treatment of some
diseases, such as diabetes
