Quantification of prawn colour using digital images showed that prawn colour became darker the longer they were held in bins, although the visual colour change was subtle (Fig. 4). This darkening of colour over time was also observed with subjective scores, up until the final
time point where significant differences in prawn colour were observed. Interestingly, the image quantification did not highlight the same loss of pigment we observed in subjectively scored animals that were held in white bins.
