Supplementation with sunflower seed
would not considerably increase the consumers’ exposure to Hg
(0.35–0.57% of the PTDI), whereas, intake of As was evaluated to
be up to 11% of the PTDI for the cookies supplemented with the
higher ingredient dose. The exposure to Cd and Pb by the consumption
of hull-less barley (with the higher dose)-enriched
cookies were estimated to be over 5% and over 8% of the PTDIs,
respectively, whereas they would be less than 5% of the PTDIs,
in the case of both levels, for supplementation with sunflower
seed.
