Bacteriocin producing species have now been reported among all the genera that comprise the LAB including Lactococcus,Streptococcus, Lactobacillus, Leuconstoc and Pediococcus as well as Enterococcus. The growth of S. aureus in foods shows a potential public health risk since this strain produce, enterotoxins that cause food poisoning. In addition, food born transmission of L. monocytogenes has been implicated of listeriosis in human involving the consumption of various foods. In this study all selected LAB isolates were not only able to inhibit the growth of Gram-positive bacteria like S. aureus and L. monocytogenes but were also active against Gram-negative bacteria like S. enteritidis.
