There are roughly two dozen mint species and over one hundred different varieties. Spearmint (mentha spicata) is the mint used by cooks and is very widespread, as is horsemint, another subspecies. Peppermint (mentha x piperita) can be recognized by its peppery scent and its purplish stalks.
