showed a higher inhibitory activity than LSEP (P < 0.05).
Mimosine content in LSEP was 8.8 g/100 g, as measured by the
HPLC method. Therefore, 0.0044 and 0.0088 g mimosine was present
in 0.05 and 0.1 g LSEP, respectively. At a concentration of 0.25%,
LSEP and mimosine showed 55.1% and 79.7% PPO inhibition,
respectively. PPO activity of 69.3% was inhibited by LSEP, when
concentration of 0.5% was used, whereas the complete inhibition
was obtained with the same concentration of mimosine. Mimosine
most probably acted as a competitive inhibitor of PPO, because of
its structural similarity with dihydroxyphenylalanine (L-DOPA)
(Soedarjo et al., 1994)
