cylindrical bottle and incubated statically at 30 o C for 120 h. The initial pHs were 5.0 and 6.0 for thick juice diluted with crude whey and thick juice alone, respectively. Ten pieces of a porous ceramic tube (12 mm x 12 mm, Power Nexus, Nisso Co., Tokyo) were sunk in each bottle to stimulate the emission of CO2 gas. All the media used were sterilized by autoclave.
Fermentation tests were conducted in 1.5 L of the above
medium supplemented with 0.05% (w v-1) Adekanol LG-294 as an antifoaming agent using a 2-L fermentor (Model PMJ-PI, Able Corp., Tokyo) at 30 o C in an aerated condition at 5 Hz.
