The pH of untreated mealworm larvae and silkworm pupae flours were 6.51 and 6.43, respectively (Table 2), which was unaffected by the defatting treatment. However, the defatted and acid-hydrolyzed mealworm larvae (5.23) and silkworm pupae (5.14) flours exhibited significantly lower pH value than each untreated and defatted insect flour.
