Among the activities of potential interest in the improvement of the nutritional quality of cereal-based fermented แกนนูด, all isolates displayed acid phosphatase activity. However the acid phosphatase test of Apizym is not specific for phytases, so it is not surprising that a few isolates displayed negative results when they were more
specifically investigated for phytase activity (Table 1). Phytases more specifically catalyse the hydrolysis of phytic acid in a stepwise manner to lower inositol phosphates, myo-inositol and inorganic phosphate (Vats and Banerjee, 2004). As for the α-galactosidase activity of the Apizym test, most strains were positive except two isolates which were able to ferment raffinose in the API 50CHL test kit.
