In addition to chemical stability concerns, several other factors
need to be considered in creating a delivery system for
carotenoids. The delivery system needs to be one in which the
carotenoid ingredient can be easily dispersed intomultiple types
of food products. If possible, it is desirable that any protection
provided to carotenoids in the delivery systemcontinues to offer
protection once the ingredient is incorporated into the food. It is
also important to consider whether the delivery systemwill alter
the appearance, flavor, or texture of the food product. Finally,
the bioactivity and bioavailability of the carotenoid, and any
desire to control the release of the carotenoid during digestion
should be determined
