for exploiting the utilization of whey. Moreover, because of the
wide applicability of whey powder, not only in dairy products
also in other food products, and also because of the health benefits
associated with probiotics, it is possible that the resulting
powder (microcapsules) containing Bifidobacterium may be used
in a great variety of foods.
