Reduced viscosities were determined using 0.125; 0.25; 0.5;
0.75 and 1 g/L pectin solutions prepared in 0.1 mol/L sodium phosphate
buffer (pH 7). After dissolution under stirring at ambient
temperature for 12 h, the solutions were filtered (0.45 lm). The
viscosities of pectin solutions at different concentrations were
determined at 20 C by means of a rheometer (Physica MCR 301:
Anton Paar, Germany) using a double gap DG26.7.
