Volatile compounds in separate fractions of cocoa pulp and nibs
were extracted by head space–solid phase microextraction (HS-SPME)
using a 50/30 μm divinylbenzene/carboxene/polydimethylsiloxane
fiber (Supelco, Bellefonte, PA, USA). Ground cocoa sample (1 g) was
put into a 4 ml headspace vial and sealedwith a septumcap. The extraction
conditions and analysis were adapted from the method of
Rodriguez-Campos et al. (2011): 15 min for reaching equilibrium and
30 min for exposing the fiber to the volatile compounds in the HS at
60 °C.
