To evaluate the effect of enzyme pretreatment on the morphology of cardamom seeds, control, hot water treated, cold water treated and enzyme pretreated cardamom seed powder were subjected to scanning electron micrograph studies. The sample was spread on a double sided conducting adhesive tape, placed on ametallic stub was coated (100 ) with gold in a sputter coating unit for 2 min and observed using Gin a LEO-435-VP electron micro-scope (LEO Electron Microscope Ltd., Cambridge, U.K.) at 20 KV.
