Strawberries and kiwi fruit have the highest total phenolic
content and antioxidant activity following by red
plum > mango > white grapes persimmon > apples > pears red
grapefruit > lemons ¼ oranges ¼ blond grapefruits pomelos > bananas > peaches. FT-IR spectroscopy was used as a rapid method
and as an additional indicator for comparison of methanol extracts
from the studied fruits. Therefore, methanol extracts were
investigated by FTIR spectroscopy, and the similarity and
differences between these fruits were based on the peaks and
bands in the polyphenol region.
