the Cooperative Extension Programme of the USDA,
through the Expanded Food and Nutrition Education
Programme (EFNEP) serves low income families to
address such issues as child care, nutrition education,
food preservation, food safety and budgeting (Mahan and
Escott-Stump, 2004).
