This does not agree with the
corrective action listed in your firm's HACCP plan. In addition, the Tab 13
instruction then goes on to contradict the preceding instruction by suggesting rejection
of only the "lot if any individual sample ~ 30 ppm" is detected following a composite
sampling revealing ~ 10 ppm and < 30 ppm histamine. More appropriately, any
sample yielding a fish sample in excess of 30 ppm histamine should be recognized as
an alarm that some fish in the lot have been abused seriously enough to cause elevated
histamine and the entire vessel "delivery," as defined in Tab 13 as "all lots from the
same catch vessel" should be rejected.
