Since the gelling properties of an alginate depend
strongly upon its monomeric composition, block structure,
molecular size and concentration of polymer and
calcium ions (13-15), the main objective of this work
was to study the gelation kinetics of capsules of calcium
alginate gel under different operational conditions.
Knowledge of gelation kinetics allows easy control over
some capsule characteristics, such as thickness and permeability to different substrates of the gel membrane.
