The cultures L. delbrueckii subsp. bulgaricus, S. thermophilus, and
the starter culture L. lactis subsp. lactis and L. lactis subsp. cremoris
were previously activated in sterile reconstituted (11%) skimmed
milk and incubated at 45 C/6 h; 45 C/4 h; and 30 C/16 h,
respectively. Then, they were used in the analysis of pure cultures
and in the manufacture process, being prepared for each
processing.
