Microbiologist and QC staff who have conducted the testing / QA evaluations on the finished product analysis records for the Yum! Chicken 9 pcs cut and Chicken Injected Hot and Spicy Marinade 9 pcs cut manufactured on the 13th May 2015. The training records for these persons shows they have received quality testing training, both initial and annual training within the last 12 months and there was an exit criteria assessment to review the training effectiveness.
QA Lab Testing Training Plan (HR014, Issue 5) approved on 6th December 2014 for training in 2015 was seen and defines the skill requirements and training methods.
Physical, chemical and microbiological testing records for the Yum! Chicken 9 pcs cut and Chicken Injected Hot and Spicy Marinade 9 pcs cut manufactured on the 13th May 2015 demonstrated compliance to the specification / QAP requirements.
Testing observed during the facility tour followed the approved methods set out in the testing procedures.
During the audit, the production processes for Yum! Chicken 9 pcs cut and Chicken Injected Hot and Spicy Marinade 9 pcs cut were seen and reviewed, it was found that the inspection / testing methods, frequencies and readings were correct and meeting the Yum! Brands Specification / QAP requirements and limits.
From interviews it was found that personnel conducting the inspections / testing had adequate knowledge of the testing requirements and limits.
