The table 5 shows that time of the drying to obtain a final content Xf=0.13kg w/kg d m is shorter when the
temperature increases consequently the drying kinetics increases this is on the one hand due to the heat flux increase
brought by the air to the product and on the other hand to the acceleration of the internal migration of water [10].
The choice of a suitable drying temperature in case of industrial process remains linked to the quality parameters of
the final product. We should pay attention to the browning phenomenon of the product.
