increase (56%) in total extractable carotenoids in avocado paste
after HHP treatment (600 MPa/3 min), and Lin and Chen (2005)
reported a pronounced increase in carotenoids after HTST treatment
(121 °C/40 s), which may be attributed to the improvement of the
extractability of carotenoids due to cell walls breaking down resulting
from HHP or HTST treatment.
