Prepare the chicken by trimming the extra fat and removing the legs, wings, and breasts
Place all of the chicken into a large stock pot and add enough water to cover the pieces
Add salt and a bay leaf, and then cover and boil.
Once the water is boiling, reduce the heat and allow the soup to simmer for about two hours.
Add onions, celery, and carrots and simmer for another 45 minutes
Remove the bones from the soup by using a strainer
Add noodles if desired and serve
