These findings are not in agreement with previous studies which reported beneficial effects at much lower US intensities. Siró et al. (2009)and Cárcel et al. (2007)reported that 2.5 W cm−2
(180 min) and 39 W cm−2 (45 min) respectively will cause water mass transfer and binding. However, Siró et al. (2009) reported decreased water-uptake and binding with higher US intensities (3–4Wcm−2) attributing this to protein denaturation. In a study using the same treatment chamber, McDonnell et al. (2013) reported myosin denaturation at the surface of samples treated with the highest power input (19 W cm−2, 40 min) which may explain the results of the present study whereby this treatment did not result in the greatest water uptake.
