Fig. 9 shows the response surface for papaya seeds oil yield (g/100 g) as a function of the temperature and air drying velocity (t = 2.25 h). In Fig. 9, it was found a linear and directly proportional effect of the air velocity on PSOY. The temperature presented a parabolic behavior with maximum point at 70 °C. In the considered range, the more adequate drying conditions, which provided the maximum seed oil yield (PSOY) were: temperature of 70 °C, air velocity of 10.50 m s−1 and drying time of 4.0 h. Under these conditions, PSOY was 26.50 g/100 g and the final moisture content was 3.70 g/100 g (w.b.). In literature there are no works presenting the yield on papaya seed oil due to the drying method. However, Malacrida et al. (2011) found a yield of papaya seed oil of 29.16 g/100 g. The seeds are, before processing, undergone drying room temperature for two weeks.
