Moreover, Argan oil extracted from fruits harvested in July pre-sented a much higher oxidative stability through the Rancimattest, than oil from earlier collection (Table 3). The induction periodincreased about 15% monthly during the first two months (Aprilto June), but then jumped to 13.0 h in oil extracted in July, whichis close to the double compared to April harvest (7.5 h). This is the strongest effect on Argan oil quality we could note over the investigated maturation period, and an important one in view of marketing this oil.
