Levels of secondary compounds were submitted to statistical
analysis by one-way Analysis of Variance (ANOVA). Tukey’s testwas
used to compare the mean values of secondary compounds between
mixed and respective single fermentations. Principal
component analysis (PCA) was carried out to compare the secondary
compounds detected both in wines by single and mixed
fermentations and in wines by mixed fermentation and blending of
single-starter wines. The PAST software ver. 1.90 (Hammer, Harper,
