In this work,the researchers study about destruction of microorganism in food such as E.coli and listeria monocytogenes by pressure cooker and high pressure processing and searching suitable time so it influence to reduce the microorganism on you demand. This work using a mathematical model by Smith[],J.A.Infante [],Malone[] and Granell[] to research constants of the relationship between microorganism in food with pressure and temperature for calculate and analysis by MATLAB.
