As members of our society become more
concerned about the origin of our food, we as an
industry must be prepared to explain the practice
of molting to meet these demands. The many advantages
of alternative molting diets in the commercial
poultry industry warrant their investigation.
The present investigation is designed
to evaluate the effects of an alternative molting
diet (alfalfa) on the functional immune system
of chickens. The purpose of the study presented
here was to determine how the avian immune
system functionally responds to alfalfa through
the measurement of several immunological parameters.
