Kenkey due to low pH was
reported to be a low risk food in terms of microbial load, wakye
(cooked rice and beans mixed) had a similar report but both could
be contaminated with lead above the acceptable levels of 0.2 mg/kg
due to usage of informally manufactured pots that could have lead
levels as high as 419 mg/kg (Tortoe et al., 2013) causing cumulative
harm.
