The crude tea polyphenols, polysaccharides and proteins
were isolated as shown in Fig. 1 and their concentrations
were shown in Table 2. The crude tea proteins of regular
and Se-enriched green tea exhibited the highest antioxidant
activity when measured using AAPH and the antioxidant activities decreased in following order: crude tea proteins >
crude tea polyphenols > crude tea polysaccharides (Fig. 2b
and c). However, the crude tea polyphenols of regular and
Se-enriched green tea exhibited the highest antioxidant activity when measured using DPPH radical scavenging method
and the antioxidant activities decreased in following order:
crude tea polyphenols > crude tea proteins > crude tea
polysaccharides (Table 1).
