Glycosyltransferases (GTs) these UGTs transfer a glycosyl moiety from UDP-sugars to a wide range of acceptor molecules such as hormones, phenylpropanoids, saponins, and xenobiotics. As a result, these molecules increase their stability and water solubility, or decrease their toxicity. In this review article, the characterization and functional diversity of UGTs involved in several important mechanisms are discussed. In addition, several potential applications are discussed to call attention to the characterization of unidentified plant UGTs.
