The oil meal (poonac) remaining after coconut oil extraction and coconut residue remaining after coconut milk extraction can be used for isolation of dietary fibre. Studies on utilisation of coconut milk residue as a source of dietary fibre are few. Coconut flour (produced from coconut milk residue) which is rich in fibre has shown to play an important role in intake of dietary fibre. Coconut flour substituted foods are able to produce high amount of short chain fatty acids (butyric acid), show low glycemic index and maintain lower weight increase (Trinidad et al., 2006). Neutral detergent fibre obtained from coconut kernel has the ability to reduce serum total cholesterol, LDL cholesterol and triglycerides concentrations in rats (Sindurani & Rajamohan, 1998).
