3.5. Kinetic models
The effective diffusivities of the WL that were calculated with the models are shown in Table 1. All of the tested models followed the same trend: samples treated with the maltodextrin-NaCl solution exhibited higher Deff values than samples treated with the sucrose-NaCl solution. This can be caused by the higher molecular weight of maltodextrin, which hinders solid uptake, and by its higher osmotic pressure and solubility, which ultimately leads to higher dehydration rates (Ferrari et al. 2011a).
