2.6. Soluble solids content and pH
Powdered samples (2.5 g) of peanut kernels were mixed with 50 mL
of distilled water for 2 h at 80 °C under atmospheric pressure. The extract was
filtered through filter paper and used for analyses
of soluble solids content and pH. For soluble solids determination, a portion
(10 mL) of the filtrate was transferred into a weighing dish and
dried at 105 °C by a convection oven to constant weight.The content of soluble solids was expressed as a ratio of
weight of extracted solids against powdered sample weight. The pH of
the extract was measured using a pH meter with a glass electrode.
