medical plants or herbs such as dandelion, chamomile,
and acacia add. Thus, microorganisms in MOCHI-KOJI
such as Rhizopus strains has a high ability of substrate
utilization. In a recently study, Rhizopus strains produced
useful materials(ex. enzyme, organic acids, etc.)from
waste or unutilized resource6)-8).
