The temperature of fermented red pepper paste produced by ohmic
heating as simulated using the proposed electrical model comprising a
resistor and capacitor, and the approximation equation for the electrical
conductivity dependence on frequency and temperature were in
good agreement with the experimental data (Lebovka, Shynkaryk,
& Vorobiev, 2006; Shynkaryk, Ji, Alvarez, & Sastry, 2010).
