Materials and Methods
Grain samples The rice cultivars Red Hom Mali and Black fragrant Khao Hom Nil harvested in 2007 were purchased from a local market in Thailand. The moisture content of the rice samples was reduced to 7% by drying at 110°C for 16 hours to prevent microbial growth during the experiment. The experiment was conducted from April to August 2008 at the Division of Postharvest Technology, King Mongkut’s University of Technology Thonburi, Thailand.
