Fig. 7 and Fig. 8 show the comparison of temperature history obtained from experiment and numerical simulation for frozen gelatin gel suddenly exposed to ambient conditions and inside an insulated box, respectively, at four selected locations. On comparing the results for all locations in both the cases, the maximum deviation between predicted and experimentally obtained temperature data was around 5 °C and the overall average deviation was approximately 1 °C. This shows that the numerical model was in reasonably good agreement with experimental data, considering many sources of variability in the physical properties and the process.
