Knowledge
The Head Chef must have proficient knowledge in the following areas:
• Thorough culinary knowledge in dessert, western, and Thai a’ la carte cuisine and group cooking
• 1-2 years experienced as Head Chef or 3 to 5 years as Sous Chef
• Good knowledge of labour control, cost control and people management.
• Good in formatting menus into SOP manual for training & brand standard purpose
Skills
The Head Chef must demonstrate the following skills;
team building
proven dessert, western and Thai kitchen cooking skills
analytical and problem solving skills
decision making skills
effective verbal and listening communications skills
College degree in hotel and restaurant management.
time management skills
Good speaking, reading and writing proficiency in English language
