In this study, the lyophilized chia mucilage presented a lower oil holding capacity
(OHC) (12.97 ± 1.90 g oil/g sample) compared to the WHC
(57.33 ± 1.24 g water/g lyophilized chia mucilage), nevertheless this value was higher
than the OHC of the fiber-rich fraction of chia analyzed by Vazquez-
Ovando et al. (2009) (2.02 g oil/g sample).
